Sweet and moist, zucchini bread is always a summer time classic.
3 cups Food Club all purpose flour
1 tsp. Food Club salt
1 tsp Food Club Baking Soda
1 tsp. Food Club baking powder
1 tbsp. Food Club ground cinnamon
3 Food Club eggs
1 cup Food Club vegetable oil
2 1/4 cups Food Club white sugar
3 tsp. vanilla extract
2 cups of graded zucchini
1 cup of chopped walnuts (optional)
1 cup of chocolate chips (optional)
- Grease two 8x4 inch loaf pans. Preheat oven to 325 degrees.
- Sift flour, salt, baking powder, baking soda, and cinnamon together in a bowl.
- Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the mixture and beat well until combined. Stir in shredded zucchini and chopped walnuts or chocolate chips (if using). Stir to combine.
- Pour into greased pans. Bake 40-60 mins or until toothpick comes out clean. Cool in pan on rack for 20-30 minutes. Remove bread from pan and cool completely.
